So. Many. Eggs.
Happy Easter...
Today started with a total #momfail tornado. I had no Easter baskets. I had no eggs. I had no dye. We planned no party. But I had two kiddos excited and ready to open their baskets, dye their eggs & see the rest of the family! Hmmmmmmmm. After my oldest (6) designed his own Easter shirt that read, "Easter yay today haa Easter is today and I don't have any eggs...." I realized it was time to get up off my hiney and make some holiday magic.
That time we thought we'd try natural egg dying...
Hopped off (pun intended) to the grocery store to redeem ourselves and wouldn't you know it... they were out of dye. "Hey hon, let's try to dye our eggs with natural ingredients! I've always wanted to try that and then we won't have to stop at any other stores!!" I said (feeling smart, hopeful & excited!)
Needless to say... seven red onions, a bag of frozen blueberries & some tumeric later, the hubby left the house for the closest open Walgreens to pick up a pack of Paas. lol. We got as far as the part of the instructions where the chipper blogger said she leaves hers overnight in the fridge for the best color before we threw in the towel (lmao). Maybe next year, but I doubt it! Lol.
Happy kids, happy life...
Thankfully it doesn't take much to make the kids happy. I really need to remember that! All they want is a little time with us where we are fully engaged with them & the things they're interested in <3 For a while anyways, but I bet that fades, eh? This is one of those slow down and breathe in the moments where they WANT you around, because someday they won't. I'm a positive thinker, though. I don't want to give that belief too much power. Let's just say that no matter what we may or may not have in the future with our kids... NOW is ALWAYS a time to cherish because why the heck wouldn't you, right?

So now that we have so many more eggs than we had this morning...
But now that we have all these colorful hard boiled eggs... what can do with them?? I'll tell you what... I am NOT a fancy cook. Not in the least. But I DO enjoy easy. So we thought we'd make a clean & easy meal with all those eggs & share it with you <3 ***Disclaimer***This is NOT toddler approved. Nothing I make is, lol (well unless you count when I put the straw into the Danimals yogurt bottle, I got that going for me, lol). But I enjoyed it & the hubby enjoyed it, so poo poo on the kids... I can't focus too long on the snubbed noses or I'll just cry, lol.
Clean Egg Salad Bell Pepper Boats...
What you'll need...
- A gaggle of leftover hardboiled Easter eggs (I used 8)
- Plain Greek Yogurt (I used 1/2 cup)
- Annie's mustard to taste (I used 1/4 cup)
- Himalayan salt to taste (I used 1/4 tsp)
- Bell peppers
- and if you're feeling dippy (aka using other veggies to dip into the abundance of egg salad) slice up whatever you have! (I used a carrot & some Heirloom tomatoes)
What you'll do...
- Peel your eggs (but you already know that, lol)
- chop em up and mix them with the ingredients above
- slap the egg salad into your pepper boats and sail away!
